Energizing Protein Bites

These simple and healthy no bake oatmeal protein balls are perfect for an easy snack on-the-go!

Ingredients

45g raw cashew nuts

45g raw almonds

45g shredded unsweetened coconut

6 Medjool dates pitted

2 tsp vanilla extract

1/8 tsp powdered Ceylan cinnamon

1 tbsp raw cacao powder (optional)

1 spoon peanut butter (optional)

Cooking

  1. Add all the dry ingredients to the food processor and process for a couple of minutes until finely grounded. – Transfer them to a medium-size bowl and set aside

  2. Add the dates and vanilla extract to the food processor and blend for a few minutes until dates are completely pureed

  3. Slowly add the dry ingredients in the food processor, 3-4 tbsp at a time, and blend until you end up with a thick/sticky dough -as in picture 3

  4. Scoop 1-2 tbsp of a mixture and with your hands roll it into a ball. Repeat until all the dough is used.

  5. Roll the balls in coconut, ground nuts or colourful sprinkles and refrigerate for about 2hrs before serving.

  6. Serve and enjoy
